Take a look at Castle Rising.  It had two spiral staircases internally to access the separate levels.   There is also a grand staircase for the entrance that cuts up the side of the structure and is fully enclosed.  There were levels built above the staircase as well.   The castle was three or four stories (depending on how you count) and it is pretty well documented.
