Man, maths sucks doesn't it? OK, so there are 4 parts of plaster to 1 part of water. Multiply that 25 times --- that's 100 parts plaster to 25 parts water. So if I have 100g of plaster then I want 25g of water... That 25g is indeed 20% of the whole 125g. However you never need to know the percentage of the whole. You need to know the mix percentage, which is based directly on the ratio.
