To prevent the free water (plaster settling) effect you need to increase the amount of plaster you add to your mix.
Be warned that it does not take much to go from a smooth flowing mix to a paste, using a set of digital scales is essential to obtain a repeatable blend.
In addition I would recommend using a Hanson mixer as these are designed for mixing thick plaster mixes without bubbles.
